Harimasa harina de maiz

Some of the best corn in the world are produced in Latin American countries. With over hundreds of years of experience Mexico produces the best quality, finest corn flour (masa de harina). The finest corn flour (harina de maiz) is produced through the process of nixtamalization, grinding, and dehydration.  Our corn flour is rich in vitamins and minerals such as vitamin B3, iron, zinc, folic acid, and calcium, with no preservatives and artificial flavoring. 

Should I use white or yellow corn flour (harina de maiz blanco y amarillo)?

Due to its higher ability to absorb moisture, the tortilla made with white corn flour are more suitable for rolling and folding without drying up too quickly. Another bonus its that it absorbs more sauce, making dishes that rely on sauces more flavorful. Thus it is more suitable for making enchiladas, flautas, and burritos.

Yellow corn flour (harina de maiz amarillo) , on the other hand, has a stronger corn aroma, but tends to dry up quicker. Its grain is also more coarse. It is more suitable for making tacos, tostadas, quesadillas, or tortilla chips. Yellow corn is thus more suitable if you are more experienced with making tortilla or prefer a stronger corn aroma. Yet it is important to note that the preference of white and yellow corn flour differs from region to region in Latin American countries.

Mixing Instruction: 

Slowly add 175ml of warm water to every 250g of Harimasa masa de harina. Mix thoroughly for 2 to 6 minutes and wait 10 minutes. Make a small ball-shaped dough, flatten it with a tortilla press (or with the bottom of two plates), and bake each side for about 30 to 60 seconds on high heat, and it's ready to eat! Tortilla would taste better on gas stove than electric stove.

Do not add oil unless you want to fry cut tortillas into chips. Sprinkle some salt onto the chips and you have yourself homemade tortilla chips perfect with homemade salsa or guacamole! An awesome snack that's both healthy and wonderfully delicious.
